Sam’s grandfather George Moorhouse started our Aireburn Herd here in the 1960s. Just under sixty years later in 2015, as a way of securing the future of Hesper Farm, Sam decided to take it in a new direction – building a dairy and becoming the very first one in Britain to make skyr.
By learning the ancient techniques and using original bio-live Icelandic skyr cultures, dating back to the year 874, has allowed Sam to create skyr as authentically as possible right here in Yorkshire.
Guess that’s what happens when you don’t follow the herd!
