WE’VE COME A LONG WAY SINCE SAM’S GRANDFATHER, GEORGE MOORHOUSE, FIRST STARTED OUR PEDIGREE AIREBURN HERD HERE AT HESPER FARM IN THE SIXTIES.
George’s son Brian and his wife Judith have taken the herd from strength to strength, always breeding for good dairy health. Our champion Aireburn Herd is multi-award winning and is at the heart of everything we do.
Our cows are known by their names, not numbers, and graze outside in the fields that we farm with hard-work, care and respect. We believe in sustainable farming and have the privilege of looking after our corner of the British countryside - protecting its riverways, hedgerows, wildlife and woodlands as well as acres of meadows, with mile after country-mile of dry-stone walls.
THE NEW DIRECTION
In 2015 due to uncertain milk markets, Brian and Judith’s son Sam decided for the sake of its long-term future to take the farm in a different direction. At the age of 21, continuing to put the herd and sustainability first, Sam built a dairy at the farm and became the first in Britain to make skyr.
The journey to make Hesper’s skyr first started in Reykjavik where Sam met skyr-master and mentor Thorarinn. He taught Sam the ancient art of making skyr. It’s those techniques Sam and the small team at Hesper still use to make skyr as authentically as possible here in the Yorkshire Dales. It’s a lot of extra work but the results speak for themselves.
